We use all white meat whole turkey breasts which are tied into a plump boneless roast. The breasts are cured and hardwood smoked using the same methods we use with our hams. The result is eating at its easiest and best: a boneless, moist, tender, and pink product with outstanding flavor and zero waste. Virtually fat free!
